
We have a saying in our house……..”who eats like this?”. We use it during a meal, that is amazing and recently, we had one of those moments. All four of us, my husband, my eight year old son, my eleven year old daughter and myself, after an exhasting weekend of gardening, tree cutting, house cleaning and reorganizing, had collapsed at the dinner table. My husband had marinated skinless, boneless chicken breasts in an obnioxious amount of lemon zest & juice, herbs (when I ask him what kind of herbs, his comment was”everything”) and tons of garlic. We grilled that, along with some aspargus, vidalia onions, red potatoes, red bell peppers, and placed it all on a bed of romaine & spinach. My son, the pickiest of us all, ate the chicken-which he proclaimed should be cooked that way every time. It was the perfect meal, to replenish us at the end a productive weekend. I am so blessed to have many of these “who eats like this?” moments, which I hope to share in my blog. The summer’s been busy, we’ve had some great meals that I plan to tell you about in the coming weeks. Stay tuned!
The picture above isn’t from the meal described here, but is a dish we eat often throughout the summer……Mom-Mom’s Eggie Beans. Given to us from my husband’s sweet Grandmother that I adore, these wax beans, are first blanched, then tossed in seasoned flour, dredged in a raw scrambled egg & fresh chive mixture and then cooked. Sprinkle a little sea salt after removing from pan and you have the perfect side to a summer salad! Enjoy!
